owner and chef

Former head of pastry in Noma restaurant, Copenhagen, Denmark.
Born in Turin, Italy he decided to move to London in 2008 to learn English, but ended up staying for almost 4 years and working in kitchens of
Joël Robuchon , Gordon Ramsay and Alberto Hernandez. After this experience he found himself working on the other side of the world: Hong Kong as sous chef at Armani Aqua, the Collage at the Conrad Hotel in Tokyo, with Maeda San, in Dubai and Sydney as Jason Atherton’s head of pastry. He met René Redzepi in Sydney and joined the Noma team upon return to Copenhagen, where he worked for almost 5 years.
Now he has landed in Milan, to add new flavors to existing food scene. 


owner and sommelier

Former sommelier – wine buyer of Iluka restaurant Copenhagen, Denmark.
Born in small picturesque village in Tuscany, he later moved to Florence to pursue studies, but the world was calling and Lorenzo found himself working and living in London from 2008 to 2015, with his first serious love spark for wine was ignited, working at chef’s Nuno Mendes restaurant Viajante, later as a sommelier at The Arts Club and as head sommelier at 2 Michellin star restaurant – The Square. In 2015 he moved to Copenhagen to work at world famous restaurnt Noma, and later Noma Australia, where he met Stefano.
After he held a position of assistant sommelier at restaurant 108, Copenhagen, where he met coffee legend Tim Wandelboe and developed big passion and love for coffee.
